From the Field to the Fork: The Tides Farm Experience

September 30, 2026

There’s something that happens when the distance between your dinner plate and where it all begins collapses completely. A morning with Farmer Patrick has a way of doing exactly that.

A Ride Worth Taking

Your farm experience begins with a short journey — quiet and unhurried, and already part of the experience. As you make your way to the Tides Farm, Patrick shares the history of farming in Virginia’s Chesapeake Bay region, a region whose agricultural roots run deep, and the particular story of this land — the same land that anchored farming here long before the Tides Inn opened its doors in 1947. The soil beneath your feet has been working for a long time.

Walking the Rows

Once you’re on the farm, the pace slows in the best way. Patrick moves through the rows with easy familiarity, pointing out crops of special interest — many of them planted by specific request from the Salt & Meadow culinary team. The farm and the kitchen aren’t two separate conversations here. They’re one continuous one.

You’re encouraged to taste as you go. A sun-warmed tomato or a just-pulled radish tells you something a beautifully plated dish simply cannot. Before you head back, Patrick will send you off with a few edible souvenirs — a small, tangible reminder that the freshest things in life are often the simplest.

What’s Growing This Fall

As autumn settles, the farm and the kitchen are moving in the same direction — toward deeper, earthier, more grounded flavors. This season, our culinary and farm teams worked together from seed to harvest on a fall garden built around the best of what the season has to offer: kohlrabi, curly kale, rainbow chard, delicata and butternut squash, baby red, golden, and candy stripe beets, sweet potatoes, and daikon radish.

Each was chosen with intention, and each will earn its place on the Salt & Meadow table. Kohlrabi and daikon will appear raw in crisp salads and slaws. Kale and chard will be sautéed, braised, or grilled into warm seasonal dishes. Squash will be roasted, puréed into soups, or woven into composed plates. The baby beets served alongside fresh cheeses and citrus. Sweet potatoes transformed into velvety purées and roasted sides that anchor the table through the heart of autumn.

Where the Garden Meets the Kitchen

For the Salt & Meadow culinary team, the farm is a partnership — one that begins long before the first course is plated. When you walk the rows with Patrick, you’re tracing the line back to what you’ll taste that evening. And understanding, in a way that stays with you, that exceptional cooking begins long before anyone sets foot in a kitchen.

The Tides Farm experience is available to resort guests.
