Meet Marshall Sereno

Marshall Sereno

Food & Beverage Manager | Sommelier

For Marshall, wine started as a curiosity and quickly became a calling.

“The more time I spent in the industry, the more I realized how intricate and complex a wine is, and how much truly goes into every bottle,” he said.

That curiosity took Marshall from the floor of a local Houston restaurant to the vineyards of the Texas Hill Country, where he spent several years at Augusta Vin Winery in Fredericksburg. There, he grew from server to Tasting Room Manager, developing a guest education program that guided visitors through the full winemaking process from vineyard to production facility.

“That place taught me a lot about making moments memorable,” he said.

Today, Marshall brings that same spirit to the beverage program at Salt & Meadow — one rooted in Virginia’s deep history with wine and spirits, dating to Thomas Jefferson and the earliest days of American viticulture. He’s particularly drawn to the uncommon varieties Virginia quietly excels at, wines that tell the region’s story in ways the familiar bottles can’t.

For Marshall, the rest comes down to hospitality. “We’re inviting guests into our home,” he says of his team’s approach — whether in Salt & Meadow, Fish Hawk, or the banquet spaces. “We should take care of them as such.”
